- 1 pound baby potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- Fresh parsley, for garnish
Instructions

Preheat the oven to 425°F (220°C).

In a large pot, boil the baby potatoes until they are fork-tender, about 10 minutes.

Drain the potatoes and let them cool slightly. Then, using the back of a fork, gently press down on each potato to flatten it slightly.

In a bowl, mix together the olive oil, salt, garlic powder, paprika, and black pepper.

Place the flattened potatoes on a baking sheet lined with parchment paper. Drizzle the olive oil mixture over the potatoes, ensuring each one is coated.

Bake in the preheated oven for 15-20 minutes, or until the potatoes are golden brown and crispy.
