  • 1 pound baby potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large pot, boil the baby potatoes until they are fork-tender, about 10 minutes.

  3. Drain the potatoes and let them cool slightly. Then, using the back of a fork, gently press down on each potato to flatten it slightly.

  4. In a bowl, mix together the olive oil, salt, garlic powder, paprika, and black pepper.

  5. Place the flattened potatoes on a baking sheet lined with parchment paper. Drizzle the olive oil mixture over the potatoes, ensuring each one is coated.

  6. Bake in the preheated oven for 15-20 minutes, or until the potatoes are golden brown and crispy.

  7. Garnish with fresh parsley and serve hot.
