How To Make Roast Chicken with Dill & Potatoes

Ingredients
- 1 whole chicken (about 3-4 pounds)
- 2 tablespoons of olive oil
- 2 tablespoons of fresh dill, chopped
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 pound of baby potatoes, halved
Instructions

Preheat the oven to 425°F (220°C).

Place the chicken in a roasting pan and pat it dry with paper towels.

In a small bowl, mix together the olive oil, chopped dill, garlic powder, paprika, salt, and black pepper.

Rub the mixture all over the chicken, making sure to get it under the skin as well.

Place the halved baby potatoes around the chicken in the roasting pan.

Roast the chicken in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden brown.

Remove the chicken from the oven and let it rest for 10 minutes before carving.

Serve the roast chicken with the crispy potatoes on the side.
