  • 1 pound baby potatoes
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


  1. Preheat the grill to medium heat.

  2. In a large pot of salted boiling water, cook the baby potatoes until they are fork-tender, about 10 minutes. Drain and set aside.

  3. In a small bowl, whisk together the balsamic vinegar, olive oil, garlic powder, dried thyme, salt, and pepper.

  4. Thread the cooked baby potatoes onto skewers, piercing them through the center.

  5. Brush the balsamic glaze over the potatoes, making sure to coat them evenly.

  6. Grill the potatoes for about 8-10 minutes, turning occasionally, until they are crispy and lightly charred.

  7. Remove the potatoes from the grill and transfer them to a serving plate.

  8. Sprinkle with fresh parsley, if desired, and serve hot.
