Ingredients

  • 8 oz rice noodles
  • 2 chicken breasts, thinly sliced
  • 3 cloves of garlic, minced
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce
  • 2 tbsp tamarind paste
  • 2 tbsp brown sugar
  • 1 cup bean sprouts
  • 1/2 cup chopped green onions
  • 1/4 cup chopped peanuts
  • 2 tbsp lime juice
  • Fresh cilantro, for garnish

Instructions

  1. Soak rice noodles in hot water for 8-10 minutes, then drain.

  2. In a large skillet, heat the vegetable oil over medium heat. Add the garlic and chicken, and cook until chicken is browned.

  3. Push the chicken to one side of the skillet and add the cooked rice noodles to the other side.

  4. In a small bowl, whisk together the soy sauce, fish sauce, tamarind paste, and brown sugar. Pour the sauce over the chicken and noodles, and toss to combine.

  5. Add in the bean sprouts, green onions, chopped peanuts, and lime juice. Stir fry for an additional 2-3 minutes.

  6. Serve hot, garnished with fresh cilantro.
