Ingredients
- 4 medium zucchinis, washed and halved lengthwise
- 1 tbsp olive oil
- ¼ cup Parmesan cheese, powdered or grated
- ¼ cup Cheddar cheese, shredded
- ¼ cup Monterey Jack cheese, shredded
- 1 tsp garlic powder
- 1 tsp onion powder
- 4 tomatoes, evenly-sized, cut into thick rings
- salt & ground black pepper , to taste
Instructions

Preheat your oven to 375 degrees F and line a baking sheet with parchment paper.
- Place zucchini halves on sheet, cut side up, and brush with olive oil.

Arrange the tomato rings neatly on top of the zucchinis.
- Sprinkle with garlic & onion powders. Season with salt & pepper. Top evenly with both cheeses.

Bake for about 10 minutes or until cheese begins to brown & tomatoes start blistering.
- Remove from oven and let stand for 10 minutes before serving.

Garnish with parsley.
