The famous Taco Bell potatoes were some of my favorite vegetarian dishes from their menu. These fast food potato dishes included the Taco Bell Cheesy Fiesta Potatoes, Loaded Potato Griller, and my absolute favorite: the Spicy Potato Soft Taco. It’s basically open-faced soft tacos filled with chunks of seasoned and fried potatoes topped with shredded iceberg lettuce, cheddar cheese, and a creamy chipotle sauce.
I wanted to make my own homemade version since Taco Bell discontinued their potato dishes from their menu. I started with their famous Taco Bell spicy potato taco since I had most of the ingredients available at home. For this potato taco recipe, I only needed to buy the Russet potatoes, flour tortillas, and chipotle peppers. The rest are basically pantry staples.This copycat Taco bell potato soft taco recipe uses a lot of powdered seasonings to really give the potato tacos those delicious Tex-Mex flavors.
Once I had the ingredients, I made the seasoned potato bites first. I prepped the potatoes and sliced them into chunks, then mixed all the powdered ingredients together in a bowl. Coat each potato chunk with the prepared seasoning and then deep fry for a few minutes. When everything was golden brown, I let it cool on a wire rack.
Next is the homemade spicy and creamy chipotle sauce which is the highlight of this copycat Taco Bell potato taco dish. It’s made of sour cream, mayonnaise, chipotle peppers, powdered seasonings, and lime juice. This sauce brings out that unique combination of spicy, savory, and tangy goodness into the dish. So don’t miss out on this delicious sauce! Just mix all of the ingredients together using a blender so it’s smooth and thick. Store any leftover sauce in an airtight container to enjoy anytime.
The last step is assembling the spicy potato soft taco. Warm the tortillas first then add in the potatoes on top followed by the sauce and shredded cheese, and you’re done! I had a great time eating this with some of my friends. It was really appetizing and the sauce made everything taste just like Taco Bell’s! I’m definitely adding this to my list of Mexican food recipes. I’m gladly making more the next time, and adding more chipotle sauce in it.
How To Make Spicy Potato Soft Taco (Taco Bell Copycat)
This Taco Bell Spicy Potato Soft Taco recipe recreates your favorite taco with crispy potatoes and savory homemade chipotle sauce in a soft flour tortilla.

Ingredients
- 2lbsRusset potatoes
- ½cupall-purpose flour
- ½tsponion powder
- ½tspgarlic powder
- ¼tsppaprika
- ¼tspcayenne pepper
- 8flour tortillas,or corn tortillas
- Olive oil,for deep frying
- ½cupCheddar cheese,finely shredded
- 1cupiceberg lettuce,shredded
For Spicy Chipotle Sauce:
- ½cupsour cream,or nonfat Greek yogurt
- ¼cupmayonnaise,such as Dukes
- 2chipotle peppers,in adobo sauce
- ½tspkosher salt
- ¼tspground black pepper
- ¼tsponion powder
- ¼tspgarlic powder
- 2tsplime juice,freshly squeezed
Instructions

Heat oil in a deep fryer to 350 degrees F.

Wash and peel potatoes. Cut potatoes into ½-inch to ¾-inch cubes. Rinse potatoes off, and pat dry with a paper towel.

Prepare seasoned flour for potatoes by combining flour, onion powder, garlic powder, paprika, and cayenne pepper in a medium-sized bowl. Stir to combine.

Drop potato chunks into the flour, and coat well. Shake off excess seasoned flour before placing potatoes to the deep fryer.

Deep fry for about 10 to 12 minutes or until the potatoes are golden brown. Remove potatoes from the fryer, and drain on wire rack.
Spicy Chipotle Sauce:

Combine all sauce ingredients in a blender and puree for about 30 seconds. Store any unused sauce in an air-tight container.
To Assemble:

Prepare tacos by warming tortillas for about 30 seconds in the microwave.

Add 3 tablespoons of potatoes to each tortilla, drizzle on chipotle sauce, and top with shredded lettuce and cheese.
