How To Make Authentic Tacos al Pastor

Ingredients
- 1 pound pork shoulder, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons achiote paste
- 1 tablespoon vinegar
- 1 tablespoon chipotle in adobo sauce
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup pineapple juice
- 2 tablespoons vegetable oil
- 1 red onion, thinly sliced
- 1/2 cup fresh cilantro, chopped
- 8 corn tortillas
- Pineapple chunks (optional, for serving)
- Lime wedges (optional, for serving)
Instructions

In a bowl, combine garlic, achiote paste, vinegar, chipotle in adobo sauce, oregano, cumin, paprika, salt, black pepper, and pineapple juice. Mix well.

Add the sliced pork to the marinade and mix until well-coated. Let it marinate for at least 1 hour, or overnight for best flavor.

Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated pork and cook for about 8-10 minutes, or until browned and cooked through.

In a separate skillet, heat the tortillas over medium heat until warm and flexible.

Assemble the tacos by placing a spoonful of the cooked pork onto each tortilla. Top with sliced red onion, fresh cilantro, and any optional toppings you desire.
