Ingredients

  • 2 lbs. boneless pork shoulder, cut into cubes
  • 1 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 tbsp. chili powder
  • 1 tbsp. cumin
  • 1 tsp. paprika
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. cinnamon
  • 8 corn tortillas
  • 1 cup diced onion
  • 1 cup diced tomato
  • 1 cup diced avocado
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large bowl, combine the pork, orange juice, lime juice, olive oil, garlic, chili powder, cumin, paprika, salt, pepper, and cinnamon. Mix well and marinate in the refrigerator for at least 2 hours or overnight.

  2. Preheat the oven to 325°F. Transfer the pork and marinade to a roasting pan and roast for 2-3 hours, until the pork is tender and the liquid has evaporated.

  3. Meanwhile, heat the tortillas on a griddle or in a dry skillet until lightly charred on both sides.

  4. Serve the carnitas on the warm tortillas, topped with onion, tomato, avocado, and cilantro. Serve with lime wedges on the side.
