  • 200g rice noodles
  • 1 tbsp vegetable oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 carrot, julienned
  • 1 bell pepper, sliced
  • 1 cup cabbage, shredded
  • 4 cups vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp chili sauce
  • 1 tsp turmeric powder
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. Cook the rice noodles according to package instructions and set aside.

  2. In a large pot, heat the vegetable oil and sauté the onion, garlic, and ginger until fragrant.

  3. Add the carrot, bell pepper, and cabbage, and cook for a few minutes until slightly tender.

  4. Pour the vegetable broth into the pot and bring to a boil. Reduce heat and simmer for 10 minutes.

  5. Stir in the soy sauce, chili sauce, turmeric powder, and salt. Cook for an additional 5 minutes.

  6. Divide the cooked rice noodles into serving bowls and ladle the hot vegetable broth over them.

  7. Garnish with fresh cilantro and serve hot.
