Ingredients

  • 1 pound okra, trimmed and halved
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (14 ounces) diced tomatoes
  • 1 cup vegetable broth
  • Fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and cook until softened.

  2. Add the okra to the skillet and cook for 5 minutes, stirring occasionally.

  3. Stir in the cumin powder, paprika, salt, and black pepper. Cook for another 2 minutes.

  4. Pour in the diced tomatoes and vegetable broth. Bring to a simmer and let cook for 20 minutes, or until the okra is tender.

  5. Serve the okra with tomatoes hot, garnished with fresh cilantro.
