Serves:

Ingredients

  • 2 heads of broccoli, cut into florets
  • 1/2 cup of cashews
  • 3 tablespoons of vegetable oil
  • 3 cloves of garlic, minced
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sugar
  • 1/4 cup of water
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large pan or wok over medium-high heat.

  2. Add the cashews and stir-fry for 2-3 minutes until they are golden brown. Remove from the pan and set aside.

  3. In the same pan, add the remaining tablespoon of vegetable oil and minced garlic. Stir-fry for 1 minute until fragrant.

  4. Add the broccoli florets to the pan and stir-fry for 3-4 minutes until they are bright green and slightly tender.

  5. In a small bowl, whisk together the oyster sauce, soy sauce, sugar, and water. Pour the sauce over the broccoli and toss to coat evenly.

  6. Cook for an additional 2-3 minutes until the broccoli is crisp-tender and the sauce has thickened slightly.

  7. Season with salt and pepper to taste. Stir in the cashews and cook for an additional minute.

  8. Remove from heat and serve the stir-fried broccoli with cashews immediately.
