  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 cups vegetable broth
  • 2 cans diced tomatoes
  • 2 cups fresh spinach
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.

  2. Pour in the vegetable broth and diced tomatoes, and stir to combine. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.

  3. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend in batches.

  4. Add the fresh spinach and chopped basil to the soup. Cook for an additional 5 minutes, until the spinach wilts.

  5. Season with salt and pepper to taste.

  6. Serve the soup hot, garnished with additional fresh basil leaves.
