  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup water
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onions are translucent.

  2. Add carrot and celery, and cook for another 3-4 minutes.

  3. Stir in dried oregano and dried basil, and cook for 1 minute.

  4. Add diced tomatoes, vegetable broth, and water. Bring to a boil.

  5. Reduce heat to low, cover, and let simmer for 20 minutes.

  6. Stir in fresh spinach and cook until wilted, about 2 minutes.

  7. Season with salt and pepper to taste.

  8. Ladle the soup into bowls and sprinkle with grated Parmesan cheese.

  9. Serve hot and enjoy!
