Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 can (14.5 ounces) diced tomatoes
- 4 cups vegetable broth
- 1 cup water
- 2 cups fresh spinach
- Salt and pepper to taste
- Grated Parmesan cheese, for serving

Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onions are translucent.
