  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 can (400g) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté until fragrant and translucent.

  2. Add diced carrots, zucchini, and red bell pepper to the pot and cook for 5 minutes, until slightly softened.

  3. Pour in the diced tomatoes and vegetable broth. Stir in dried basil, dried oregano, salt, and pepper. Bring the soup to a boil, then reduce heat and simmer for 15 minutes.

  4. Use an immersion blender or transfer the soup to a blender to blend until desired consistency is reached.
