  • 1 can of black beans, drained and rinsed
  • 1 can of kidney beans, drained and rinsed
  • 1 can of cannellini beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 4 cups of vegetable broth
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of chili powder
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, grated cheese, sour cream

Instructions

  1. In a large pot, heat oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until vegetables are softened, about 5 minutes.

  2. Add the cumin, paprika, and chili powder. Stir to coat the vegetables with the spices.

  3. Add the drained and rinsed beans to the pot. Stir well to combine.

  4. Pour in the vegetable broth and bring the soup to a boil. Reduce heat to a simmer and let it cook for 1 hour, stirring occasionally.

  5. Season with salt and pepper to taste.

  6. Serve hot with optional toppings like chopped cilantro, grated cheese, or sour cream.
