  • 2 cans of white beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 3 cups of vegetable broth
  • 1 cup of heavy cream
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the diced onion and minced garlic, and sauté until they become soft and fragrant.

  2. Add the drained and rinsed white beans to the pot, along with the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.

  3. Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, transfer the soup to a regular blender and blend in batches.

  4. Stir in the heavy cream, dried basil, dried oregano, salt, and pepper. Simmer the soup for another 10 minutes, allowing the flavors to meld together.

  5. Serve the creamy Italian white bean soup hot, garnished with fresh parsley. Enjoy!
