Ingredients

  • 1 bunch of collard greens, stems removed and leaves chopped
  • 1 tablespoon olive oil
  • 2 cloves of garlic, minced
  • 1 onion, diced
  • 1 cup vegetable broth
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the garlic and onion, and sauté until fragrant and softened.

  2. Add the collard greens to the pot, stirring to combine with the garlic and onion. Cook for 2-3 minutes until the greens start to wilt.

  3. Pour in the vegetable broth and sprinkle in the smoked paprika. Season with salt and pepper to taste.

  4. Reduce the heat to low, cover the pot, and let the collard greens simmer for 25-30 minutes until tender.

  5. Serve hot and enjoy!
