  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup fresh or frozen peas
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • Parmesan cheese, grated (for serving)
  • Fresh basil, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and cook until onion is translucent.

  2. Add carrots, celery, zucchini, and green beans. Cook for 5 minutes, stirring occasionally.

  3. Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat to low and simmer for 15 minutes.

  4. Add cannellini beans, kidney beans, peas, dried oregano, salt, and pepper. Cook for another 10 minutes.

  5. Serve hot, garnished with grated Parmesan cheese and chopped fresh basil.
