Ingredients
- 1 tbsp vegetable oil
- 2 garlic cloves, minced
- 1 onion, diced
- 2 tbsp Thai red curry paste
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- 1 red bell pepper, sliced
- 1 cup sliced mushrooms
- 2 cups cooked chicken, shredded
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- Juice of 1 lime
- Fresh cilantro, for garnish
Instructions

Heat the vegetable oil in a large pot over medium heat. Add the minced garlic and diced onion. Saute until the onion becomes translucent.

Add the Thai red curry paste and stir-fry for 1-2 minutes until fragrant.

Pour in the coconut milk and vegetable broth. Bring to a simmer.

Add the sliced red bell pepper, mushrooms, and cooked chicken. Stir well and let it simmer for 10 minutes.

Stir in the fish sauce, soy sauce, brown sugar, and lime juice. Cook for an additional 2 minutes.
