  • 250g prawns, peeled and deveined
  • 200g rice noodles
  • 3 cups chicken broth
  • 2 tbsp Thai red curry paste
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1 cup coconut milk
  • 1 red bell pepper, thinly sliced
  • 1 small carrot, julienned
  • 1/4 cup roasted peanuts, crushed
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Cook rice noodles according to package instructions. Drain and set aside.

  2. In a large pot, heat the curry paste over medium heat for 1 minute until fragrant.

  3. Add the chicken broth, fish sauce, and sugar to the pot. Bring to a simmer.

  4. Add the prawns, bell pepper, and carrot to the pot. Cook for 5-7 minutes until the prawns are cooked through.

  5. Stir in the coconut milk and cook for another 2 minutes.

  6. Divide the cooked noodles among 4 bowls. Ladle the soup over the noodles.

  7. Top with crushed peanuts and garnish with cilantro.

  8. Serve hot with lime wedges on the side.
