How To Make Vegetarian Spicy Thai Noodle Soup Recipe
This Thai-inspired noodle soup is packed with flavors and a spicy kick to warm you up on a chilly day.

Ingredients
- 8 oz. rice noodles
- 1 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp grated ginger
- 1 red bell pepper, sliced
- 1 jalapeno pepper, sliced
- 4 cups vegetable broth
- 1 can coconut milk
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp Thai red curry paste
- 2 cups baby spinach
- juice of 1 lime
- cilantro, chopped, for serving
Instructions

Soak the rice noodles in hot water for 10-15 minutes, until softened. Drain and set aside.

Heat the vegetable oil in a large pot. Add the onion, garlic, and ginger and sauté for 2-3 minutes.

Add the red bell pepper and jalapeno pepper and stir-fry for another 2-3 minutes.

Mix in the vegetable broth, coconut milk, soy sauce, brown sugar, and Thai red curry paste. Bring to a simmer and cook for 10-15 minutes.

Add the spinach, lime juice, and soaked rice noodles to the pot. Cook for an additional 2-3 minutes, until the spinach is wilted and the noodles are heated through.

Serve the soup hot, garnished with cilantro.
