This Thai-inspired noodle soup is packed with flavors and a spicy kick to warm you up on a chilly day.

Ingredients

  • 8 oz. rice noodles
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp grated ginger
  • 1 red bell pepper, sliced
  • 1 jalapeno pepper, sliced
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp Thai red curry paste
  • 2 cups baby spinach
  • juice of 1 lime
  • cilantro, chopped, for serving

Instructions

  1. Soak the rice noodles in hot water for 10-15 minutes, until softened. Drain and set aside.

  2. Heat the vegetable oil in a large pot. Add the onion, garlic, and ginger and sauté for 2-3 minutes.

  3. Add the red bell pepper and jalapeno pepper and stir-fry for another 2-3 minutes.

  4. Mix in the vegetable broth, coconut milk, soy sauce, brown sugar, and Thai red curry paste. Bring to a simmer and cook for 10-15 minutes.

  5. Add the spinach, lime juice, and soaked rice noodles to the pot. Cook for an additional 2-3 minutes, until the spinach is wilted and the noodles are heated through.

  6. Serve the soup hot, garnished with cilantro.
