  • 8 oz salmon fillets, skinless
  • 4 cups chicken broth
  • 2 cups water
  • 6 oz rice noodles
  • 1 stalk lemongrass, bruised
  • 2 kaffir lime leaves
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tsp brown sugar
  • 1/2 tsp red pepper flakes (optional)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.

  2. In a large pot, combine chicken broth, water, lemongrass, kaffir lime leaves, garlic, and ginger. Bring to a boil and let it simmer for 10 minutes to infuse the flavors.

  3. Add the salmon fillets to the pot and cook for 5-7 minutes, until cooked through. Remove the salmon from the pot and set aside to cool slightly. Once cooled, flake the salmon into bite-sized pieces.

  4. Remove the lemongrass and lime leaves from the pot. Stir in soy sauce, fish sauce, lime juice, brown sugar, and red pepper flakes (if using).

  5. Divide the cooked noodles among 4 bowls. Ladle the hot soup over the noodles, and top with flaked salmon. Garnish with fresh cilantro.

  6. Serve with lime wedges on the side.
