Ingredients

  • 2 1/4 cups bread flour
  • 1 1/2 cups rye flour
  • 1 1/2 tsp instant yeast
  • 1 1/2 tbsp caraway seeds
  • 1 tbsp sugar
  • 1 1/2 tsp salt
  • 1 cup warm water
  • 1 tbsp vegetable oil
  • 1 tbsp molasses
  • Cornmeal, for dusting

Instructions

  1. In a large bowl, combine bread flour, rye flour, yeast, caraway seeds, sugar, and salt.

  2. Pour in warm water, vegetable oil, and molasses. Mix until well combined and a sticky dough forms.

  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

  4. Place the dough in a greased bowl and cover with a clean cloth. Let it rise for about 2 hours, until doubled in size.

  5. Preheat the oven to 375°F (190°C).

  6. Punch down the dough and shape it into a round loaf. Place it on a baking sheet dusted with cornmeal.

  7. Cover with a cloth and let it rise again for about 1 hour, until doubled in size.

  8. Bake the bread for 30-35 minutes, or until golden brown and sounds hollow when tapped on the bottom.

  9. Remove from the oven and let it cool completely on a wire rack before slicing.
