Ingredients

  • 2 lobster tails, shells removed and meat chopped
  • 4 cups of chicken stock
  • 1 cup of heavy cream
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 tablespoons of butter
  • 2 tablespoons of all-purpose flour
  • 1/4 cup of white wine
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion, garlic, carrot, and celery. Cook until the vegetables are soft, about 5 minutes.

  2. Sprinkle the flour over the vegetables and stir well to coat. Cook for an additional 2 minutes.

  3. Pour in the white wine and cook until the liquid has reduced by half.

  4. Add the chicken stock and bring to a boil. Reduce the heat to low and let simmer for 20 minutes.

  5. In the meantime, heat a separate pan over medium heat and add the chopped lobster meat. Cook for 5 minutes, until the lobster is opaque.

  6. Transfer the cooked lobster to the soup pot and stir in the heavy cream. Simmer for an additional 5 minutes.

  7. Use an immersion blender or transfer the soup to a blender and blend until smooth.

  8. Season with salt and pepper to taste.

  9. Serve hot, garnished with fresh parsley.
