How To Make Spago’s Lobster Bisque Recipe

Creamy and savory lobster soup with a hint of sherry.

Serves:

Ingredients

  • 2 lobsters (1 1/2 lb each), steamed and shelled
  • 1/2 cup of dry sherry
  • 5 cups of seafood stock
  • 6 tbsp of unsalted butter
  • 1/4 cup of tomato paste
  • 1 onion, chopped
  • 1 shallot, minced
  • 1 garlic clove, minced
  • 1/4 cup of all-purpose flour
  • 1 1/2 cups of heavy cream
  • Salt and pepper
  • Chervil for garnish

Instructions

  1. Melt the butter in a pot over medium heat. Add the onions, shallot, and garlic, and cook for 5 minutes.

  2. Add the tomato paste and flour, whisking for 1 minute.

  3. Add the sherry and seafood stock, and bring to a simmer.

  4. Cook for 30 minutes, or until reduced by half.

  5. Add the lobster meat and heavy cream, season with salt and pepper, and blend until smooth.

  6. Strain the mixture through a fine mesh sieve, and reheat if necessary.

  7. Serve with chervil garnish.
