How To Make Spago’s Lobster Bisque Recipe
Creamy and savory lobster soup with a hint of sherry.
Serves:
Ingredients
- 2 lobsters (1 1/2 lb each), steamed and shelled
- 1/2 cup of dry sherry
- 5 cups of seafood stock
- 6 tbsp of unsalted butter
- 1/4 cup of tomato paste
- 1 onion, chopped
- 1 shallot, minced
- 1 garlic clove, minced
- 1/4 cup of all-purpose flour
- 1 1/2 cups of heavy cream
- Salt and pepper
- Chervil for garnish
Instructions

Melt the butter in a pot over medium heat. Add the onions, shallot, and garlic, and cook for 5 minutes.

Add the tomato paste and flour, whisking for 1 minute.

Add the sherry and seafood stock, and bring to a simmer.

Cook for 30 minutes, or until reduced by half.

Add the lobster meat and heavy cream, season with salt and pepper, and blend until smooth.

Strain the mixture through a fine mesh sieve, and reheat if necessary.

Serve with chervil garnish.
