  • 1 lb white fish fillets, cut into chunks
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups vegetable or fish broth
  • 1 can diced tomatoes
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


  1. In a large pot, heat some oil over medium heat. Add the onion and garlic and cook until softened.

  2. Add the carrots and celery and cook for another 5 minutes.

  3. Pour in the vegetable or fish broth and bring to a simmer.

  4. Add the fish chunks, diced tomatoes, and dried thyme. Season with salt and pepper to taste.

  5. Cover the pot and let it simmer for about 15 minutes, or until the fish is cooked through and flakes easily with a fork.

  6. Serve the fish soup hot, garnished with fresh parsley.
