How To Make Jammy Dodger Flowers

Ingredients
- 1 and 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 egg yolk
- 1/2 teaspoon vanilla extract
- 1/4 cup raspberry jam
- Powdered sugar, for dusting
Instructions

Preheat oven to 350°F (175°C).

In a large bowl, mix together flour and sugar. Cut in the butter using a pastry cutter or fork until mixture resembles coarse crumbs.

In a small bowl, whisk together the egg yolk and vanilla extract. Add to the flour mixture and mix until a dough forms.

Roll out the dough on a floured surface to about 1/4 inch thickness. Use a flower-shaped cookie cutter to cut out flower shapes.

Place half of the flower shapes onto a baking sheet lined with parchment paper. Spoon a small amount of raspberry jam onto each flower shape, spreading it out evenly. Top with the remaining flower shapes and press gently to seal the edges.

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Once cooled, dust the cookies with powdered sugar for decoration.
