Ingredients

  • 2 cups sweetcorn kernels
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, melt butter over medium heat. Add diced onion, red bell pepper, and minced garlic. Cook until vegetables are tender.

  2. Stir in all-purpose flour until vegetables are coated. Cook for 1-2 minutes.

  3. Slowly add vegetable broth, stirring constantly to prevent lumps. Bring to a simmer.

  4. Add sweetcorn kernels and dried thyme to the pot. Season with salt and pepper to taste. Cook for 10-15 minutes, until corn is tender.

  5. Stir in milk and simmer for an additional 5 minutes.

  6. Serve hot, garnished with fresh parsley.
