Ingredients

  • 2 leeks, sliced
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • 1/2 cup heavy cream
  • Chopped fresh chives, for garnish

Instructions

  1. Place the leeks, potatoes, onion, garlic, and vegetable broth in the soup maker.

  2. Season with salt and pepper.

  3. Close the lid and select the soup setting.

  4. Let the soup maker do its magic and cook until the vegetables are tender.

  5. Once cooked, use an immersion blender to blend the soup until smooth and creamy.

  6. Stir in the heavy cream.

  7. Serve the soup hot, garnished with fresh chives.
