How To Make Slow Cooker Spanish Chicken

- 4 chicken thighs, bone-in and skin-on
- 1 onion, sliced
- 3 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 can (14 oz) diced tomatoes
- 1/2 cup chicken broth
- 1 tbsp paprika
- 1 tbsp dried oregano
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
- Fresh parsley, for garnish

In a slow cooker, add the chicken thighs, onion, garlic, bell peppers, diced tomatoes, chicken broth, paprika, oregano, cumin, salt, black pepper, and cayenne pepper. Mix well to combine.

Cover and cook on low heat for 4 hours, or until the chicken is tender and cooked through.
