How To Make Boulangère Potatoes

Classic French dish featuring thinly sliced potatoes baked in a flavorful broth and topped with golden breadcrumbs.

Preparation: 20 minutes
Cooking: 1 hour
Total: 1 hour 20 minutes

Serves:

Ingredients

  • 4 large potatoes, peeled and thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 2 sprigs of fresh thyme
  • 2 cups of vegetable or chicken broth
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and garlic, and cook until softened and slightly caramelized.

  3. Add the sliced potatoes to the skillet and toss to coat in the onion and garlic mixture. Season with salt and pepper.

  4. Transfer the potato mixture to a baking dish, spreading it out evenly. Pour the broth over the potatoes, making sure they are fully submerged.

  5. Place the fresh thyme sprigs on top of the potatoes. Cover the baking dish with foil.

  6. Bake in the preheated oven for 45 minutes. Remove the foil and continue baking for an additional 15 minutes, or until the potatoes are tender and the top is golden.

  7. Remove from the oven and garnish with fresh parsley before serving.
