- 1 tablespoon vegetable oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 (14.5 oz) can diced tomatoes
- 1 (10 oz) can red enchilada sauce
- 2 cups chicken broth
- 2 cups shredded cooked chicken
- 1 cup frozen corn
- 1 cup black beans, rinsed and drained
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro
Instructions

Heat the vegetable oil in a large pot over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.
