  • 2 leeks, white and light green parts only, sliced
  • 2 cloves of garlic, minced
  • 2 tablespoons of butter
  • 4 cups of vegetable broth
  • 2 cans of white beans, drained and rinsed
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the sliced leeks and minced garlic and cook until they become soft and fragrant.

  2. Add the vegetable broth and bring to a simmer. Cook for about 10 minutes until the leeks are tender.

  3. Using an immersion blender or a regular blender, blend the soup until smooth and creamy.

  4. Return the soup to the pot and add the white beans. Cook for another 5 minutes to heat through.

  5. Stir in the heavy cream and season with salt and pepper.

  6. Serve the soup hot, garnished with chopped parsley.
