Serves:
Ingredients
- 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
- 2 tablespoons honey
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1 tablespoon cornstarch
- 3 tablespoons water
Instructions
-
In a small saucepan, combine the mixed berries, honey, lemon juice, vanilla extract, and cinnamon. Cook over medium heat until the berries start to release their juices, about 5 minutes.
-
In a small bowl, whisk together the cornstarch and water until smooth. Stir the cornstarch mixture into the berry mixture and continue to cook for another 5 minutes, or until the sauce has thickened.
-
Remove from heat and let the compote cool slightly before serving. Serve warm over pancakes, waffles, yogurt, or ice cream.
