Preparation: 10 minutes
Cooking: 15 minutes
Total: 25 minutes

Serves:

Ingredients

  • 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 2 tablespoons honey
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 3 tablespoons water

Instructions

  1. In a small saucepan, combine the mixed berries, honey, lemon juice, vanilla extract, and cinnamon. Cook over medium heat until the berries start to release their juices, about 5 minutes.

  2. In a small bowl, whisk together the cornstarch and water until smooth. Stir the cornstarch mixture into the berry mixture and continue to cook for another 5 minutes, or until the sauce has thickened.

  3. Remove from heat and let the compote cool slightly before serving. Serve warm over pancakes, waffles, yogurt, or ice cream.
