Warm up cold nights with a creamy Olive Garden inspired chicken gnocchi soup! It’s loaded with tender veggies, savory chicken, and soft potato gnocchi.

  • 3tbspbutter
  • 1tbspolive oil
  • 1cuponion,diced
  • ½cupcelery,diced
  • 2garlic cloves,minced
  • ¼cupall purpose flour
  • 2cupshalf and half
  • 14ozchicken broth,(1 can)
  • 1tbspfresh thyme
  • 1cupcarrots,shredded
  • 1cupfresh spinach leaves,chopped
  • 1cupchicken breast,diced, cooked
  • 16ozpotato gnocchi,(1 package)
  • salt and pepper,to taste


  1. In a large pot, add butter and olive oil. Over medium high heat sauté onion, celery and garlic until tender.

  2. Add the flour to create a roux and cook for 1 minute. Slowly add the half and half and chicken broth and stir until it starts to thicken.

  3. Add the thyme, carrots, spinach, chicken and gnocchi. Simmer for about 5 minutes or until gnocchi is cooked and soup is thickened.

  4. Salt and pepper to taste and serve immediately. Enjoy!

If you want a thinner soup add 1 more can of chicken broth.
