Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 stalks celery, diced
- 4 cups chicken broth
- 1 cup water
- 2 boneless, skinless chicken breasts, cooked and shredded
- 1 package (16 ounces) gnocchi
- 1 cup half and half
- Salt and pepper, to taste
- Fresh parsley, chopped (optional)

In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
