Ingredients

  • 1 whole chicken, about 3 pounds
  • 1 onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 4 garlic cloves, minced
  • 8 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 8 ounces egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Place the chicken in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour or until the chicken is cooked through. Remove the chicken from the pot and let it cool. Once cooled, shred the chicken meat and set aside.

  2. In the same pot, heat some olive oil and add the chopped onion, sliced carrots, sliced celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.

  3. Add the shredded chicken back to the pot along with the chicken broth, bay leaves, dried thyme, and dried rosemary. Bring to a boil, then reduce heat and let it simmer for 20 minutes to allow the flavors to meld together.

  4. Cook the egg noodles according to package instructions. Drain and set aside.

  5. Remove the bay leaves from the soup and discard. Season the soup with salt and pepper to taste.

  6. To serve, ladle the soup into bowls and add a portion of cooked egg noodles. Garnish with fresh parsley.
