Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 6 cups chicken stock
- 1 bay leaf
- 1 tsp dried thyme
- 2 cups cooked shredded chicken breast
- 2 cups egg noodles
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until onions are translucent.

Add carrot and celery and cook until slightly softened.

Pour chicken stock into the pot and add bay leaf and dried thyme. Bring to a boil.

Reduce heat to low and add cooked shredded chicken and egg noodles. Let simmer until noodles are cooked.
