  • 1 onion, chopped

  • 1 tsp ground coriander

  • 4 cups vegetable broth
  • 2 cups water
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lemon wedges, for serving

Instructions

  1. Rinse the black lentils under cold water and set aside.

  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Cook until the vegetables are tender, about 5 minutes.

  3. Add the minced garlic, ground cumin, ground coriander, and smoked paprika to the pot. Cook for an additional 1-2 minutes until fragrant.

  4. Add the black lentils, vegetable broth, and water to the pot. Bring to a boil, then reduce heat to low and simmer for 1 hour or until lentils are tender.

  5. Using an immersion blender or a regular blender, blend about half of the soup until smooth. This will help thicken the soup.

  6. Season with salt and pepper to taste.

  7. Serve the black lentil soup hot, garnished with fresh cilantro and a squeeze of lemon juice on each bowl.
