  • 2 ripe avocados, mashed
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan and set aside.

  2. In a large bowl, combine the mashed avocados, sugar, vegetable oil, eggs, milk, and vanilla extract. Mix well.

  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt.

  4. Gradually add the dry ingredients to the avocado mixture, stirring until just combined.

  5. Pour the batter into the prepared loaf pan and smooth the top.

  6. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
