How To Make Mushroom Chicken Piccata

Ingredients
- 4 chicken breasts
- 1/2 cup all-purpose flour
- Salt and pepper to taste
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers
- 2 tablespoons chopped fresh parsley
Instructions

Season the chicken breasts with salt and pepper. Dredge them in flour, shaking off any excess.

In a large skillet, heat 2 tablespoons of butter and the olive oil over medium heat. Cook the chicken breasts until golden brown on both sides, about 5 minutes per side. Remove them from the skillet and set aside.

In the same skillet, melt the remaining 2 tablespoons of butter. Add the sliced mushrooms and garlic and cook until the mushrooms are tender, about 5 minutes.

Add the chicken broth, lemon juice, and capers to the skillet. Bring the mixture to a boil and simmer for 2 minutes.

Return the chicken breasts to the skillet and cook for an additional 5 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

Garnish with chopped parsley before serving.
