Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 6 cups chicken stock
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 cups uncooked egg noodles

Instructions

  1. In a large pot, bring the chicken stock to a boil.

  2. Add the chicken breasts, carrots, celery, onion, garlic, bay leaf, thyme, salt, and pepper to the pot.

  3. Reduce the heat to low and let simmer for 30-40 minutes or until the chicken is cooked through.

  4. Remove the chicken breasts, shred them, and return them to the pot.

  5. Add the egg noodles and let cook for an additional 8-10 minutes or until cooked through.

  6. Discard the bay leaf and serve hot.
