How To Make Salmon & Spinach Pasta

Ingredients

  • 8 oz salmon fillets
  • 8 oz pasta (penne or fusilli)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.

  2. Season the salmon fillets with salt and pepper. Heat 1 tbsp olive oil in a skillet over medium heat. Cook the salmon for 4-5 minutes on each side, until cooked through. Remove from heat and flake the salmon into smaller pieces.

  3. In the same skillet, heat the remaining olive oil and sauté the minced garlic until fragrant, about 1 minute.

  4. Add the spinach to the skillet and cook until wilted.

  5. Pour in the heavy cream and grated Parmesan cheese. Stir until the cheese has melted and the sauce has thickened slightly.

  6. Add the cooked pasta and flaked salmon to the skillet. Toss everything together until well combined. Cook for an additional 2-3 minutes to heat through.

  7. Season with salt and pepper to taste.

  8. Serve hot and enjoy!
