Serves:

Ingredients

  • 1 lb salmon fillets
  • 4 cups diced potatoes
  • 1 cup diced onions
  • 1 cup diced carrots
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 tsp dried dill
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 sheet of puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large pot, boil the diced potatoes until fork-tender. Drain and set aside.

  3. In a separate pan, melt the butter over medium heat. Add the onions, carrots, and garlic. Cook until the vegetables are softened.

  4. Stir in the flour and cook for 1 minute. Gradually whisk in the milk until smooth.

  5. Add the cooked potatoes, salmon, dill, salt, and black pepper. Gently stir to combine.

  6. Transfer the mixture into a greased baking dish.

  8. Brush the pastry with the beaten egg to create a golden crust.

  9. Bake in the preheated oven for 30-40 minutes, or until the pastry is crispy and golden.

  10. Allow the pie to cool for a few minutes before serving.
