Ingredients

  • 4 medium potatoes, peeled and grated
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp butter, melted
  • 4 slices smoked salmon
  • 1/4 cup soured cream
  • Fresh dill, for garnish

Instructions

  1. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.

  2. In a large bowl, combine the grated potatoes, flour, salt, and black pepper. Mix well.

  3. Heat a non-stick skillet over medium heat and brush with some of the melted butter.

  4. Using a spoon, drop small portions of the potato mixture onto the skillet and flatten with the back of the spoon to form scones. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and keep warm.

  5. Repeat step 4 with the remaining potato mixture, brushing the skillet with more melted butter as needed.

  6. To serve, place a slice of smoked salmon on top of each potato scone. Add a dollop of soured cream and garnish with fresh dill.

  7. Enjoy the potato scones with smoked salmon and soured cream as an appetizer or a light meal.
