How To Make Old Fashioned Lemon Pie

- 1 9-inch pie crust
- 3/4 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 1/2 cups water
- 3 large eggs, separated
- 2 lemons, juiced and zested
- 2 tablespoons unsalted butter
Instructions

Preheat the oven to 350°F (175°C).

Place the pie crust in a 9-inch pie dish and set aside.

In a medium saucepan, combine the sugar, cornstarch, and salt. Gradually whisk in the water until smooth.

Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Boil for 2 minutes, then remove from heat.

In a separate bowl, beat the egg yolks. Gradually whisk in about 1/4 cup of the hot sugar mixture, then pour the yolk mixture back into the saucepan.

Cook over low heat, stirring constantly, for another 2 minutes. Remove from heat and stir in the lemon juice, lemon zest, and butter until the butter melts.

In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the lemon mixture until well combined.
