Ingredients
- 2 kohlrabi, peeled and cubed
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 cups vegetable broth
- 1 cup heavy cream
- 1 tbsp butter
- Salt and pepper to taste

In a large pot, melt the butter over medium heat. Add the onion and garlic and cook until softened.

Add the kohlrabi cubes to the pot and cook for about 5 minutes, until slightly tender.

Pour in the vegetable broth and bring to a simmer. Cook for 15-20 minutes, until the kohlrabi is fully cooked and soft.

Using an immersion blender, puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender and blend until smooth, then return to the pot.

Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes, until heated through.
