Ingredients
- 4 large potatoes, peeled and grated
- 1 small onion, grated
- 2 cloves of garlic, minced
- 2 tablespoons all-purpose flour
- 2 eggs, beaten
- Salt and pepper to taste
- Vegetable oil for frying
- 200g smoked salmon
- Sour cream and fresh dill for garnish
Instructions

In a large bowl, combine the grated potatoes, onion, garlic, flour, eggs, salt, and pepper. Mix until well combined.

Heat a large skillet over medium heat and add enough vegetable oil to cover the bottom.

Take a handful of the potato mixture and shape it into a patty. Place it in the hot skillet and press it down slightly with a spatula. Repeat with the remaining mixture, making sure to leave some space between each patty.

Cook the potato cakes for about 3-4 minutes on each side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain any excess oil.

To serve, top each potato cake with a slice of smoked salmon. Garnish with a dollop of sour cream and a sprig of fresh dill.
