Ingredients

  • 8 ounces penne pasta
  • 1 pound Italian sausage, casings removed
  • 1 bunch broccoli rabe, trimmed and chopped
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook, breaking it up into small pieces, until browned and cooked through.

  3. Add the minced garlic and red pepper flakes (if using) to the skillet. Cook for an additional minute until fragrant.

  4. Add the broccoli rabe to the skillet and cook until tender, about 5-7 minutes.

  5. Pour in the chicken broth and simmer for 2-3 minutes to allow the flavors to meld together.

  6. Add the cooked penne pasta to the skillet and toss everything together until well combined. Season with salt and pepper to taste.

  7. Serve hot, garnished with grated Parmesan cheese.
