How To Make Luxe Fish Pie

Ingredients

  • 500g white fish fillets, such as cod or haddock
  • 200g smoked salmon, cut into strips
  • 1 leek, sliced
  • 1 carrot, diced
  • 200g frozen peas
  • 300ml fish stock
  • 200ml double cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tbsp chopped fresh dill
  • 1 tsp lemon zest
  • Salt and pepper, to taste
  • 800g potatoes, peeled and diced
  • 50g butter
  • 100ml milk

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Place the fish fillets and smoked salmon in a large ovenproof dish.

  3. In a separate pan, melt the butter and add the leek and carrot. Cook until softened.

  4. Stir in the flour and cook for 1 minute. Gradually whisk in the fish stock and cream.

  5. Add the peas, dill, and lemon zest to the pan. Season with salt and pepper.

  6. Pour the sauce over the fish in the ovenproof dish.

  7. In a separate pan, boil the potatoes until tender. Drain and mash with the butter and milk.

  8. Spread the mashed potatoes over the fish mixture, covering it completely.

  9. Bake in the preheated oven for 40 minutes, or until the potato topping is golden and crispy.

  10. Serve hot and enjoy!
